The cart passed its inspection with flying colors today. The final city business license is in hand, bank accounts set up, the insurance company is churning out a long list of ‘named insured’ forms for our potential cart locations.
We built ramps so the cart can safely enter and exit the van, 100 pounds of crêpe mixes have arrived, we’ve met with dairy people and meat people and fruit people…the stage is almost set.
Next week we make our first bulk purchases of perishables – meats, cheese, cream, spinach, fruits.
Then, at the end of the week, the curtain goes up on the dress rehearsal.
We will have a soft opening. We’ll be setting up our cart in a parking lot here in Silverton and inviting neighbors, business acquaintances and friends to have a crêpe (or two) on us while we practice making crêpes for a crowd.
