The first of FOUR license applications is in the mail to the county health department. Here in Oregon for our operation we need TWO health licenses, one for the cart, and one for the commissary where we prep and warewash. Each one needs a plan review, so we have sent off the plan review for the cart while we continue talking with our restaurant friends about sharing their facility as a commissary. Each submission requires a fee. By the time we are done we’ll have spent over $1,000 in license fees. That is LOT of crêpes. We hope Oregon is hungry.
