We do our best to respond to the requests from our crêpe fans — unique combinations , additional ingredients. We wish we had a HUGE truck and could have everything in season all year long. Alas, that is not reality.
One piece of feedback we can do something about is the size of the crêpe. For many people the standard Parisian street crêpe is simply too large. So people often end up sharing, which is fine. Shared food is a special treat. But not everyone wants the same thing. “A puzzlement,” as the King (no, not Elvis) once said. So this year we will experiment and offer two crêpe sizes: La crêpe traditionnelle et la crêpe petite.
The Traditional Crêpe will be the same as served on the streets of Paris and Salem, Oregon. The Petite Crêpe will be about half-size. Same menu, same everything, even Gluten Free. Just smaller. Let us know what you think.
See you at the market.
