One of the treats of the fall season are these beautiful and delicious wild mushrooms. For a limited time, we are sautéing these beauties with sage and serving with Swiss cheese and spinach.
Asparagus is upon us. While it lasts, we will be serving Roasted Asparagus Crêpes with Bacon, Swiss & Hollandaise.
We are happy to report that we now have a steady supply line to ensure that we can offer Chevre on our menu. Since the Carlson’s decided to close their Fairhaven Farm Goat Dairy in Dallas, we have been searching for a worthy successor. From time to time we’ve offered some fine French chevre, and some of the great goat cheeses in Oregon and Washington, but now we have found a steady supply and a worthy successor in Carneros, California.

In the wine industry, most people now about Californian wines, and many know about Napa Wines. Not as mny know about Carneros, a sunny little spot just south of Sonoma. Carneros produces some amazing wines. And is a great place to make cheese from small goat dairies.
(Psst. get to the cheese) Oh, right. The Cheese. Well, Sonoma has been known as the home of Sonoma Jack, a wonderful cheese. So Laura Chenel moved to a great neighborhood when she relocated her goat cheese company from Sebastapol to Carneros. Her chevre set the standard for goat cheese production since the 70s.
We’ll have Asparagus crêpes this week – with Swiss & Hollandaise or with our savory vegan spread.

Entertaining? Crêpes make a great holiday meal. Order a stack of Salem’s best crêpes and you can create a delicious breakfast, brunch, dinner or desert for your family and friends.
We have Sweet, Savory or Gluten and Dairy Free Vegan crêpes. Order some of each (minimum 4 of each type). They freeze well too. Ideas and Recipes on request.
